Chickpea Tofu Fritters

A unique recipe from Burma is tofu that is soy free! Made from chickpea powder, this is a really great secret recipe to whip up your own tofu from simply combining fine chickpea powder, water and turmeric. Make sure to prepare the chickpea tofu mix the night before.

Once fried, they have a fantastic crispy skin outer crunch followed by a smooth centre. Great as a side dish or a snack. The golden colour is beautiful and now you can make tofu that is soy free whenever you want!

Ingredient Quantity
Fine Chickpea powder 2 cups
Water* 6 cups
Turmeric ¼ tablespoon
Salt ¼ tablespoon
Olive oil Few drops
*water is for mixing with the chickpea powder

Step 1:

Prepare this step a night before. In a large bowl, add chickpea powder, a pinch of salt and 1 tsp of turmeric powder. Mix them well using a whisker. Gradually add water to prevent lumps and mix as you go. Cover the bowl and keep it over night at room temperature.

Step 2:

Skim the top with a spoon if there are any bubbles the next morning. Use a sieve to pour the clear part of the mixture in the pot to boil over slow heat.

Step 3:

Key here is steady slow heat to bring to temperature. Heat until it reaches a boil and stir for about 5 mins. Stir the rest of the mixture before pouring it into the pot via sieve. Add a few drops of olive oil for smoother consistency. Keep stirring consistently for about 10 min until the tofu thickens enough.

Step 4:

The best way to check when it is ready is when you scoop it up with a wooden spoon, the mixture has to be thick and hesitant to fall. Brush the walls of a glass container with olive oil and pour the tofu into it. Keep the layer thin to get silky firm tofu. Refrigerate in the fridge for about 1 hour, 2 hours if you leave it at room temperature.

Step 5:

Carefully flip the container containing the set tofu onto a chopping board. Cut the tofu into medium sized squares (and scour it) with 2 knife marks in the middle to get them crispy outside and cheesy sort of texture inside.

Step 6:

Heat a pan on a high heat with olive oil for deep frying. Deep fry the tofu squares for about 10 min and they are ready to be served. Ensure the oil is hot and carefully flip the tofu to ensure it cooks evenly. Serve and enjoy!
