Buttery Bean Lunch Box
Special recipe for visitors – Mimi’s Laphet. Vegan Buttery Lima beans make for a great packed lunch. Lima beans are one of my favourites! They are very easy to prepare and when cooked have a great natural buttery taste and texture.
The Lima beans are the hero here and you really don’t need to do too much to them to bring out their great taste. A bit of turmeric gives a beautiful golden colour and adds a bit of fragrance as well.
With a side of rice it makes for an easy, yummy and nutritious packed lunch.
|Lima Beans||1 cup|
|Water||1 ½ cups|
|Garlic & Onion Minced||2 Tablespoons in total|
|Fried Garlic Flakes||2 Tablespoons(Optional)|
|Olive oil||3 Tablespoons|
Dry Lima beans can be available in a lot of grocery stores in packages. It is similar to butter beans or broad beans but it is bigger in size and taste buttery when cooked in the right way.
Soak the beans in the water the night before. You will see some peels are floating in the morning and it means it will be easy when you peel them off. Peel them off and rinse under water and drain them.
You’ll need minced garlic and onions , mainly onions and only 1 or 2 cloves of garlic here. Add turmeric into the mixture and mix.
Heat up the pan, add olive oil, the onion and garlic mixture, cook at medium heat for 2-3 minutes until fragrant. Add the beans and coat well with the mixture to get an even colour. Add water slowly , turn up the heat and boil, covered.
Once boiled, turn down the heat into low- medium and simmer for 15 minutes , cover with a small gap with the lid. Add salt. Stir occasionally to not stick to the pan. Plate the lima beans, top off with fried onion flakes if you like, otherwise it is already delicious as it is.
